- 1 Hand full of Organic mixed greens
- Freshly shaved parmesan cheese
- tsp. Balsamic vinegar
- 1/2 tsp. Dijon mustard
- 1 Roma tomato, diced
- 2 Organic cage free eggs
- 2 tsp. Olive oil
- Salt * pepper to taste
In a non-stick skillet or cast iron coat pan with unsalted butter fry egg as desired, then place on a plate.
Vinaigrette – In a small bowl mix vinegar, mustard, and olive oil until emulsified
Salad – In a medium sized bowl toss greens, tomatoes, and vinaigrette until lightly coated.
Place salad on the plate with the eggs and garnish with the shaved parmesan cheese. Enjoy!
