Quick & simple Peach Cobbler that’s better than the rest!



  • 6-7 fresh organic yellow peaches, sliced
  • 4-5 organic apricots, sliced
  • 1 Lemon, juiced
  • 1 tbsp. corn starch
  • 2 tsp. vanilla extract
  • 1 c. brown sugar
  • 1 tbsp. nutmeg
  • 4-5 tbsp. cinnamon 
  • 1 c. chopped pecans


  • 1 c. all purpose flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • Zest from half of lemon
  • 1/2 c. whole milk
  • 1/2 stick of unsalted butter, cold and cut into small cubes
  • 1 tsp. granulated sugar


  1. Heat oven to 400 degrees.
  2. In a large pot add rinsed and sliced peaches and apricots. Turn on heat to medium. Then add the rest of the ingredients and let simmer for about 5-6 minutes stirring occasionally with a wooden spoon or silicon spatula until mixture thickens and boils slightly. Pour peaches into ungreased casserole dish. Set aside.
  3. In a medium sized bowl add the flour, salt and baking powder. Next cut-in the cubes of butter with your hands or two knives to incorporate the butter into the flour until flour looks like fine crumbs. Stir in milk.
  4. Drop dough by the spoonful onto the hot peach mixture.
  5. Bake for 25 to 30 minutes or until topping is golden brown. Serve warm with vanilla ice cream.
